Nobody stocks a pasture with cows. They stock it with pounds of dry matter, and the cows are just how the dry matter leaves the place. Every honest stocking rate number starts there, which is why two neighbors on the same soil type can run wildly different numbers and both be right — one of them is grazing 25 percent of what grows and the other is grazing half of it and living with the consequences in August.
This is the arithmetic an extension agent will work through with you on a legal pad, written out so you can run it on your own place before you buy the extra pairs.
The four numbers that decide stocking rate
- Forage production, in pounds of dry matter per acre per year. Not tonnage of hay, not how green it looks — air-dry pounds of what actually grows.
- Utilization rate, the share of that production you can take with a grazing animal without hurting regrowth. Take half, leave half is the old rule; 25 percent is honest on continuous grazing.
- Animal unit demand. One animal unit is a 1,000 lb cow, dry or with a calf under weaning age, eating roughly 26 lb of dry matter per day — about 2.6 percent of body weight.
- Grazing season length in months, which turns a per-acre number into a per-year one and gets you to AUMs.
An animal unit month, or AUM, is one animal unit grazing for one month — call it 780 lb of dry matter, though you will see 790 and 800 used in different extension bulletins. Whichever constant you use, use the same one all the way through. Mixing an 800 lb AUM in one step with a 26 lb daily intake in another is how people end up 8 percent overstocked without knowing it.
The formula
Available forage per acre equals total production multiplied by utilization rate. Divide that by the dry matter one animal unit eats over your grazing season and you have animal units per acre. Invert it and you have acres per animal unit, which is the number most people actually quote.
That gap — 47 pairs versus 29 — is not a modeling artifact. It is the entire argument for cross-fencing, and it is why the utilization rate input matters more than the production estimate on most operations.
Animal units are not head
Head counts lie the moment the herd is mixed. A mature bull is about 1.35 AU, a 700 lb yearling around 0.7, and a 1,400 lb cow with a calf pushing 1.4. Scale animal units linearly off the 1,000 lb standard by body weight — a 1,300 lb cow is 1.3 AU — and add roughly 0.15 AU for a calf at side once it is past three months and taking real forage.

Horses are scaled above their body weight on purpose — they graze closer and waste more than cattle on the same ground. Most western range guides put a mature horse at 1.25 AU.
Honest numbers by region
There is no national cows-per-acre figure and anyone quoting one is selling something. Rainfall does the deciding. These are broad extension ranges for year-round carrying capacity on unimproved pasture or range, not for a fertilized fescue paddock in a good year.

Where people go wrong
- Stocking to an average year. Averages include the good years you cannot bank. Stock to about 80 percent of average production and keep flexible stockers or a cull list for the rest.
- Using as-fed weights for forage. A clipped hoop sample weighed green will overstate production two to four times. Dry it down or apply a dry matter percentage.
- Counting acres you cannot graze. Timber, rock, riparian setbacks and the half mile a cow will not walk to water are not stocked acres.
- Forgetting the bull and the replacements. Three bulls and fifteen heifers are almost 18 animal units — most of a full month of grazing on a small place.
- Ignoring distance to water. Cattle over half a mile from water use the far end of a paddock lightly and hammer the near end, so effective utilization drops even if the paddock number looks right.
Check the number against the ground
Run the math, then walk the pasture in late July with a grazing stick. If the calculated stocking rate has you moving cattle earlier than planned two years running, the production estimate is too high, not the cattle too hungry. Adjust the input, not the outcome.
